Diario de Chris1979, 17 feb. 10

I did pretty well with my eating yesterday. Dinner probably could have been healthier but we had all this jumbo lump crabmeat that I wanted to use before it went bad. So I made crabcakes. After all, I am from Maryland and we love our crabcakes! :) I used I can't believe it's not butter to make it healthier as well as light mayo. Salem loved them, couldn't even notice the difference. Ah, cooking success. ;)

My car got so stuck in the ice/snow at school last night. Of course, I'd also forgotten my cell phone at work so I couldn't call Salem to come save me. Or Triple A, for that matter. Luckily these two sweet college boys volunteered to be my knights in shining armor. They must have spent a half an hour digging me out. I will never talk trash about frat boys again, lol.

THREE THINGS I'M GRATEFUL FOR TODAY:
1)Nice people who come to the aid of strangers
2)Finding out Salem's tax refund will cover his medical copay :)
3)Allrecipes- that site has PHENOMENAL recipes (free)

Your lucky, my husband wont eat any fish at all - other tuna that comes out of a can. Its so hard to cook for him, that I just don't bother anymore!! LOL Bummer about getting stuck in the snow, but good news about the college boys - that was very nice of them. I got stuck in the snow for over an hour right infront of my neighbors house (a professional fireman) and he couldn't care less. I wonder if there was something healthier you could have made with the crab meat (not that the cakes were that bad at all). Maybe you could have just put them on a baking sheet and put them in the oven rather than pan frying them? I don't know if that would work though.... Maybe use Panko rather than regular breadcrumbs, and low fat mayo, etc... Its kind of fun trying to figure out how to make yummy foods better for you!! LOL Have a great day!!!

You know what Momo-- I actually did use panko crumbs. I thought about baking them but that would have taken longer and I was just too lazy last night... lol. It is defintiely fun trying to make stuff healthier, but still tasty! You are doing so well.. I need to do a serious fast like you!

I love crabcakes. Chris you will have to tell me how you make them. Funny you mentioned that in your journal today because yesterday I bought some frozen ones which were alright but fresh...yum

Great job of changing your recipe to make it healthier. It can be done with a little forethought. I need to do more of it myself.

Ingredients 1 egg 3 tablespoons mayonnaise 4 teaspoons lemon juice 1/8 teaspoon red pepper flakes 1 teaspoon dried tarragon 1 tablespoon minced green onions 8 ounces crabmeat 1/2 cup crushed buttery round crackers 1 tablespoon butter Directions In a medium bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and scallions. Gently stir in crabmeat, being careful not to break up meat. Gradually mix in cracker crumbs, adding until desired consistency is achieved. Heat butter in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in skillet, and cook until golden brown, about 5 to 6 minutes on each side

I used egg substitute, panko crumbs, ICBINB, and lite mayo. :)
