I baked 7 dozen cookies yesterday, oatmeal raisin and chocolate chip without one of them going in my mouth. (patting my own back as we speak) I've stalled getting the last pounds off, so because I do not want to have to record a gain of any sort, I will not eat any of the snickerdoodles that I make today. I'll also keep exercise a priority and drink the proper amount of water. I haven't been drinking nearly enough.

Helpful Hint: Remember that chewing minty gum can help keep you from nibbling on those no-nos sitting in front of you.

Way to go! That is the hardest thing for me to do is not dip the finger in the cookie dough! Have you ever made cookies with Splenda before? I have not and wondered if they turned out the same. I thought about trying to bake cookies with Splenda and Atkins Baking Mix. Just for fun to see how they would be. Hmmmmm...Anyway, I for one am very proud of you and am loving your I will and will not mantra! I think we should all make one for ourselves. "I, (state name), do solemnly swear not to consume (state desired no no) as doing so would be detrimental to my goals as well as my figure. Furthermore, I do solemnly swear to eat nothing but bland, tasteless foods that are good for me but will make me smokin' hot! You are so funny! Nope. I had some baking mix a couple of years ago, but didn't care for it much. I'm still trying to keep myself motivated by both the hope for a flat belly and by the promise of a low carb sweet treat. I rewarded myself this week with a couple of small glasses of wine a couple of nights in a row, but until I drop another pound, no more alcohol. This has been hard because I've always enjoyed a glass of wine in the evenings while cooking dinner. Plus a few mixed drinks on the weekends-thus the "beer belly". I'm also putting off making that low carb peppermint fudge I've been dying to try. I need to prove to myself that I'm still on track.

I don't mind the baking. It's the constant calling of my name that drives me crazy once those little morsels are put away. Calling...mocking...making me crazy with hungry desire. Yet I ignore them and eat a celery stick! Great willpower there and great way to focus on what is really important.

I have baked with splenda. Hearty oatmeal cookies come out the best, anything that doesn't really rely on the browning of the sugar works. Don't expect the cookies to brown at all. Brownies and fudge come out better than cookies, as do cakes and sweet breads, but really if you're baking cakes and sweet breads what is the point of omitting sugar? LOL. I found a great book "Low Carb Comfort Foods" and you should all check it out. It uses alternative flours like almond, soy and whey protein instead of flour. It is kinda fun, but still, use in moderation.
