Last nights dinner. Sweet potato, cauliflower, pumpkin, chickpea curry. Scattered with basil, coriander and mint leaves, and extra chilli for me! I followed this with hot chips splashed with vinegar (no oil used in cooking but I overdid the sauce tut tut)and a dessert of banana ice-cream. (frozen mashed up banana with cocoa powder and cashew nuts, tastes better than it looks!). I love filling myself up with nutritious food. Its such a lovely change from starving myself to lose weight. Scales this morning said I am down another 0.3kgs since my last official weigh in last Friday.

Thank you. It definitely was. I hesitate to post pics of food as I feel it might not help people struggling with cravings. You know, you go to diet sites and its endless pics of tempting food, something we are trying to cut down on. However I just wanted a visual of a typical day of my food intake in my journal for future reference. Oh and to show my diet choice is nothing to worry about. It's all healthy, home cooked, low salt, no oils etc. One can eat white potato and lose weight! ( just got to be wise with what you add to the potato) The spud fit guy on utube is my latest hero for helping me overcome my fears of carbs/starch. It's an affordable plan too.

Sounds and looks like you are doing a good job. :) Do you have an Air fryer for your chips? My kids bought me one and I love it.

nooo :( I dont have an airfryer nor a vitamix blender. What a lucky mummy you are! I am sure both in my life would make this sooo much easier. I find though if I boil the chips first in water till you can poke a fork in easily, dry them, sprinkle with seasoning (no salt though as this stops them crispening up) they turn out nice. Never as crunchy as chips done in even a teaspoon of oil but I omit all oil from cooking. This way I can have more in my tummy for the same calories or less. I need to look into an airdryer. Can you use it with no oil at all? not even a smigen?

I have cooked chips in Air fryer without oil just wet them before put in. Other wise I use a quick spray of light olive oil which I like better than the canola they use in oven fry chips.Seems though that you have worked out a good way to do them. I find the Air fryer great because it gets the girls cooking instead of me having to do all and is much healthier. So they get as much fun out of my present as I do lol.

Such good tips there. I make wedges like you describe, Sammy. I put paprika and chicken seasoning on mine before I bake them.
