Mock French Toast

A pancake looking Fench toast suitable for Atkins Induction and beyond.

Ingredientes

Instrucciones

  1. Put the pork rinds in a quart size Ziploc bag, discarding any hard pieces. Crush with a meat mallet until finely crushed.
  2. In a small bowl, beat the eggs well; stir in all but pork rinds. Add the pork rinds and let stand for 5-10 minutes until it thickens and becomes "gloppy".
  3. Heat a little butter and oil (the oil helps keep the butter from burning) in a very large non-stick skillet.
  4. Spoon in the batter, dividing into 4 medium size pancakes. If you don't have an extra large skillet, make 2 pancakes at a time.
  5. Cook until nicely browned on the bottom; flip and cook the other side until brown. Serve with sugar free syrup, if desired.

OOPS...my bad! The calories are "per pancake!" Wishful thinking, huh?!! Still an awesome recipe that I will make again.

Heavy cream? Eeep! Has anyone tried this using something besides heavy cream, and does it turn out?

I also looove this recipe. I use Walden Farms 0 carb, 0 sugar maple syrup and they are just yum!

I love the taste of them. However, I must have done something wrong becrause they fell apart on me. I could not get my batter to thicken as much as I thought it should have. Any suggestions?

I make "french toast" with a very similar recipe to this. I kind of form them to squares so they look more like bread. I think they're great! It's hard to find substitutes that actually taste like the things they are copying but these work quite well. Along with some Log Cabin brand sugar free syrup they make a great breakfast! The texture is similar to french toast and between the cinnamon and the syrup they really do taste quite similar to french toast. I sometimes alter the recipe to make "bread" to hold my sandwiches or wraps. Really they hold up quite well!

My little girl used to love this for breakfast! Make sure to get the very light colored regular flavor pork rinds. The dark colored ones sometimes have a strong flavor. I made silver dollar sized pancakes. I only used a sprinkle of cinnamon and the vanilla I used had 0 carbs.
