Recipe: Broccoli and Spinach Bake 500 gr Diced Spinach - Steamed or bring to boil - optional. 500 gr Broccoli cut to your preferred size – Steamed or just bring it to boil 1 onion cut to the size you like 5g Crushed Garlic and Ginger 5g Butter Salt, Pepper to taste 5-10ml Origanum or Italian herbs Teaspoon Marmite 7 eggs 125ml Yogurt 125ml Cultured Cream and 100ml water 50g Grated Cheddar Cheese Mix the Yogurt, Sour or Cultured Cream and mix with about 100ml water. You may use full cream milk and full fat cream cheese, mascarponi or cottage cheese as alternative. Fry the onion and garlic in butter until it turn glassy. Add spinach with just enough of the yogurt, cream and water mix and Marmite to the onion mix and boil for 5-10 minutes, as alternative bring to boil or steam the spinach first. Bring Broccoli with a little salt to boil and drain water or steam. Transfer the cooked spinach mix to a flat baking dish with the broccoli on top. Sprinkle the origanum on top and add salt, black pepper to taste. You may lightly mix it if you prefer. Beat the eggs, rest of Yogurt, Cream, water mix (or milk and cream cheese together). Add 50g Grated Cheese with a little salt to this and stir well. Pour this mixture over the broccoli and spinach. It should just cover it. Bake in the oven for 35 – 45 minute depending on the depth of the dish. The egg mix should solidify and be cooked through. Serve!
