I just feel hopeless. Sometimes like now, this battle feels so insurmountable that I just want to give up everything. This was such a shit week. Been working long hours, not been able to cook. I am feeling so down right now

Everyone has bad weeks, but that doesn’t do much to make anyone feel better about their own. Take it easy on yourself. Just committing to this journey of taking better care of yourself is a HUGE deal.

When I get super busy and it's hard to make time for cooking I do a couple different things... if I know ahead of time that my upcoming week is going to be rough, then I meal prep a few dinner and lunches on a Sunday... chicken breasts, mixed veggies, pulled pork... easy stuff that can be done at the same time and portioned out... if I have a bad day and I haven't meal prepped then what I sometimes do is go to Spar. A lot of Spars have really good deli sections with home made take away style food. they prepare rice and roast veggies, chicken and curries. that way I save myself time but I don't have the guilt of a sodium loaded takeaway. Life happens, so it's just a matter of finding ways that are convenient for yourself to put yourself first.

Thank you both for your comments and support. Shereen, if you make chicken breast and veggies, how long does it actually last in the fridge? I'm so scared of those meal prep Tupperwares in the fridge, afraid it will be off or tasteless? How do you do it?

Zuna - I do 3-4 days worth of planning. The chicken breasts I do for 20-30 minutes 180°, with spices (usually cumin, paprika, garlic and onion) then the veggies I do slightly under so that when I reheat, they finish off in the microwave at work... To the veggies I also add the juices from the cooked chicken. I've never had any illnesses from chicken prep .. I just stay on the safe side and never go over the 4 day mark.

i know what you mean with long hours and not time to cook... i live it every day... my meals dont take me more than 8 to 10 min to make and when i make dinner i make lunch for the next day too...

I've been meal prepping for 10+ years, because I live on my own and can't be bothered with constant cooking. I've eaten food (rice, chicken, beef) that was in the fridge for more than 10 days, I'm still alive. To be honest I've never had to throw food out because of spoilage. A good tip is to keep the difference foods in separate containers until you are ready to eat it. I never meal prep vegetables because I don't like the change in texture...I rely more on fresh vegetables or steam them fresh.
