I wanted to incorporate more olive oil into my diet(Good Fats)and I stumbled onto this recipe for "Olive Oil Cake" ... I made it this morning. OMG Delicious!

Olive Oil Cake

Servings:8 *See NOTES Below

Cook Time: 25-30 minutes

Ingredients:

1 cup extra virgin olive oil
3/4 cup Coconut flour
3/4 cup erythritol-powdered
6 large eggs
2 tsp Baking powder
1 1/4 tsp Baking Soda
2 tsp Vanilla Extract
1/4 tsp salt

Instructions:

1.Combine all dry ingredients in a bowl and set aside.

2.Beat eggs to 3 times the volume in another bowl.

3.Add olive oil, and vanilla extract to eggs and combine.

4.Slowly add the dry ingredients into the wet as you combine.

5.Pour into a greased spring form pan (we used a 9 inch pan).

6.Bake at 350 for 25-30 minutes (edges will have browned).

NOTE: 1/8 of this cake is far too generous ... just waaaaay too much cake. I'll cut into 16 pieces and enjoy the hell out of it @ 1.2 carbs per slice!
