Today was a great cooking day since I am done school and I actually felt like cooking today. For lunch I made grilled pork tenderloin with garlic, scallions, long hot peppers, and spices/herbs, with onions, carrots and asparagus, all grilled as well. Sent a picture to my trainer and she was jealous, and wants me to cook for her haha.
Dinner I made a paleo dinner for the whole family (AND THEY LOVED IT! ALL OF IT!) Grilled chicken with scallions, jalapenos, garlic, and balsamic vinegar and lime juice squeezed over top. Red peppers, poblano peppers, and onions grilled in olive and coconut oil. Grilled string beans. And cauliflower "rice" with coconut oil, butter, and spices. Now my mom never eats veggies like broccoli or cauliflower (or anything coconutty), but loved it! My sister hates green beans, but ate them like they were candy. I call this dinner a success. Paleo can be fun, and not as restrictive as people think.
