Happy Sunday evening!
Turns out I'm not likely to become a fan of fresh, ripe jackfruit. It's okay...and I'll try to eat this just to keep from wasting it, but I don't think I will buy it again. The other way I'd like to try it is to eat green jackfruit as pulled pork, with barbecue sauce...but it's $2.50/can, and I may put this off for a little while. I can't find the green fruit here in its fresh state.
It has been a good weekend. My hip stopped hurting yesterday afternoon, I slept well last night, and I feel optimistic about the coming week. I froze six 12oz. packages of green beans from our garden - we'll eat those this winter. I made some zucchini soup that is really good, and I'll be taking that to work with a zucchini side dish/casserole that I baked in muffin form. Lots of vegetables to enjoy this week! I'm making kimchee too, and a bean sprout salad...and I've got Persian cucumbers for snacks!
I also picked sumac fruits to make za'atar seasoning, once the fruits have dried...and we worked on barns, yard and garden. It was a good, productive weekend!
The soreness I experienced this round with my hip caused me to decide to take action. I'm going to message my doctor and find out if she can do an exam/diagnose when I'm not in pain...if so, I'll make an appointment, and if not, we can figure out how to move forward with this. It's keeping me from being active, and that's slowing weight loss and affecting my health...time to get it taken care of.
We're still tweaking the meal plan for the week, but mine will be vegetable heavy. What have you got planned for the comng week?
