well certainly looks great what kind of bread is it sourdough? do you put anything else in your 🧆 mix or just spinach? I would eat it that's pretty good to me.

Leah_guffey, it is an America's Test Kitchen recipe and one of my favorites! It has chicken stock and a ton of garlic. If you search chickpeas and spinach and ATK, you will find the video recipe!

Okay I'll certainly do that I get four cans of beans a month for free 3 Wic. Which is an absolutely awesome program I'm very thankful that I'm able to receive such support. And let's be honest spinach isn't too bad even with today's inflation prices you can get a bag of spinach for a dollar fifty Frozen at most large grocery stores. And since both stay good for virtually forever sounds like a pretty good choice of meals for me. During the winter all the food prices go up so me not eating as much meat really saves us a lot of money on our grocery bill and allows me to buy a few more presents for Christmas which is always a big stretch to my budget. Unfortunately the only way I can make extra money most of the time is to reduce my spending. And this looks like a great and tasty recipe to help me do so. I don't know if you ever watched game of thrones and their comment that winter is coming but I kind of view Christmas that way now that I've become an apparent Christmas is coming

Leah_guffey, yes and the meal comes together very quickly, which I love. It asks for frozen spinach which is easy to store! I love it. 😁

Can you use your WIC to buy dried bean. That would be a money saver.I eat a lot of beans. A small serving almost every morning for breakfast.

Yes, Kenna I looked on the WIC-approved foods brochure and it did list That I could instead get one bag of dried beans. I don't have a lot of recent experiences with dried beans. We used to used them when I was a child, but ever time I've try to do so as an adult with bags of beans from the food bank I've had very mixed results. This could be because they are very old beans though (out of date). I read online that dry beans that are to old don't do well or it could be from user error but I'll try again next month with the garbanzo beans/chickpeas and see... How long could I keep them in an air tight container for in the fridge?

Lea—- I buy 3-4 kinds of beans at a time because they aren’t sold in stores and I have to order them, it amounts to about 10 pounds . They last about a year. I use a crock pot and just let then cook until they are soft. It does take longer as they age. Some beans require a soaking and others don’t. It is so worth it and, I control the sodium content. I don’t keep them in the fridge, just in the pantry.

Oh no not the dry beans I meant after they where batch cooked for the week. If you cook like that... You know like when you cook rice then store extra in the fridge in a air tight container to be used in multiple dishes throughout the week. I often do this with the items I eat because they aren't readily eaten by the rest of the family but rather made into smaller sub meals I make for myself out of their dinners. 😺 That way I can cater to everyones needs without having to cook completely separate meals. I also helps because I can use staples like rice and beans without having waste. The little ones are bad for wanting to waste veggies or bits of this or that so we limit that as much as we can by using it in other meals so long as the food hasn't been touched. 😊

I'm kinda funny about food waste and avoid it when possible so we can afford a few luxuries and brand name items. I've gotten pretty good at it and catching sells. Like I only buy butter a couple times of year which sounds weird but as long as you time it right and are very very sparing with your usage you can have butter about a third to half a year and not pay a huge portion you just have to wait till it's on super sale use coupons and be savvy then stock on about 10 pounds and freeze it. Sounds crazy I know but it means that around birthdays and holidays I can used quality baking products 😁. I'm very careful to always utilize sales and coupons and sometimes I skimp on other things to hit those sales just to have those nice things knowing that ultimately I will save a lot of money and I have been known to spend my birthday money on groceries just to hit these things but I think that over time that I've made better decisions because of these actions.
