@Cersey, 886 calories! Though my calorie limit is 1500 per day... so that's basically breakfast for sure. lol

@BabyBbomb, I'm so sorry!!! You could EASILY swap out the eggs for shrimp and/or pork if those work for you, and you'd get more protein for less calories to boot. Or black beans, if you're vegetarian (cheese is obviously not vegan). I use eggs because they give protein, and that runny yolk adds a certain richness to the rice. I absolutely love it. 🤤
