Very true. I eat them either in chia pudding OR I mix them with frozen berries / cherries and let the seeds soak up the juice from the defrost.

My go-to with chia is to pour 2/3 cup soymilk over 1/3 cup old-fashioned oats with 1 tablespoon each chia and flax meal. Then I walk away for 20 minutes and come back to nicely thickened oats, ready to top with fruit and nuts. Haven't tried the chia puddings yet. Nor have I tried using soaked chia seed as an egg substitute, but I've seen it recommended

I didn't know either. I eat mine in salads. So I have not been soaking them and don't like yogurt. Or oatmeal. Or soymilk.
