Well, our bodies can only process a certain amount of food at at time. So if we eat too much at one sitting, a certain amount is stored as fat. If you eat throughout the day, the metabolism keeps on burning. Food is fuel for your metabolism. To keep a fire going, you have to keep putting wood on it, same is true for our metabolisms. The faster your metabolsim the more calories you will burn.
