Oh yum!
Have you tried making a white sauce with cauliflower? Super creamy. Simply steam the cauli until very soft, then blitz with cottage cheese or milk and salt/spice. You can also do a 'carbonara' effect by whisking an egg with some pasta water. Turn off the heat and add the egg mix to the pasta. Keep on stiring as the heat of the pan will cook the egg mix and turn it into a creamy sauce.
