1/4 cup quinoa, 1/2 cup of water, 1 &1/2 chopped parsley (I didn't have this much growing, maybe half?), 4 spring onions finely chopped (I used shallots as they were growing), 2 tomatoes (I used approx 1/3 can diced tomatoes as I didn't have any fresh), 1 garlic clove grated/minced, 1/2 TSP paprika (I used smoked)

Bring quinoa and water to boil in saucepan. Turn down to simmer, stir through all ingredients except parsley. Cook approx 10 minutes or until water absorbed and quinoa cooked. Stir through parsley. Leave a longer if like parsley slightly cooked, or serve immediately. I added a pinch of sea salt flakes to serve.

It's almost a quinoa tabouli - if you changed the proportions of quinoa to parsley and added a oil/vinegar dressing. Looks delicious - I love raw parsley like this!

whoops, I forgot to add it also has 1/2 cup diced mushrooms.
