Doubt if you ate 7000 calories over your maintenance level (You didn't... did you?) Weight gain after a return to normal eating is probably your body restoring it's normal glycogen levels. One gram of glycogen is linked to 3.5 grams of water, so this can be 2-5 lbs of water. This is the reason why someone just starting off on a diet loses so quickly the first week... then not so much afterwards. The glycogen is depleted and never gets fully restored during the diet in theory. So if you want to get down to 155... you might have to go to 153 and when you return to normal eating, the glycogen/water levels may increase your weight some.
