Barely made 1500 calories yesterday, and that's only because I had oatmeal late last night and put walnuts in it. It is going to be very difficult to stay in the 1700-2000 calorie range. It could be easy to go over - Just put a bunch of nuts in stuff, or oils. That would keep my food healthy, but there are soooooo many calories in that stuff that I can see putting the pounds on quickly. Without those though, it's almost impossible to get even 1500 calories in. This whole dairy thing is a severe PITA. I could happily get 2000 in by getting a small yogurt every couple days. Or a whole bunch of stuff I love - greek yogurt, cheese and crackers, turkey taco with sour cream and cheese. Cut dairy out and I've cut out 75% of the stuff I really like, and most of the stuff I like that has calories. Now I eat fruit 4 times a day, and veggies, edemame especially - but even soups with any caloires have dairy of some sort in them for a thickening agent. This is not going to be easy. And I don't want to constantly fill myself up. I don't like the feeling and it will make it very difficult to maintain over time if my stomach is used to a large amount of food. shit.
