Recipe is so easy: as I can eat only one egg, I scrambled it in a bowl, stirred with salt, pepper and poured this mixture in the holes of bell peppers, those I had fried a couple of minutes on the pan beforehand. Then covered the pan with lid. After the eggs looked like ready, I sprinkled mozzarella and chopped basil on top. Toast the bread and add the veggies you can find in your fridge. That’s it 😁
