Ugh, finally got the calories up to a reasonable level yet still keeping the carbs low. I did eat it by having an extra snack in the evening of ricotta and cream and Dutch cocoa powder. I think I'll freeze it next time for a pseudo- ice cream. I feel full but I'll see how it goes with the next couple of days. At least i went running, too. Good night all!

I don't really have a recipe. I just happen to use ricotta a lot. I mix it in with eggs to make a sort of pancake/crepe and now either with a touch of whipping cream (whipped or not) or plain with some splenda and cocoa. It's a simple high calorie "get the calories up" snack... and it tastes pretty good too. It's very versatile.

For some reason I'm afraid of ricotta. I bought a cup of it once and let the tub just sit in the frig. I'll try again due to the motivation of this thread...I'll see what happens.

Just try to add the ricotta to things and add things to it. I do mostly use it with eggs. Let me know how it goes!
