The "Great Dairy Project" continues as I experiment with low-fat cottage cheese, low-fat yogurt, sweetened almond milk, low-fat cheese, raw almonds, etc., instead of using non-fat (mostly sugar!) versions.

My appetite is satisfied with the extra fat; and I am not overdoing it at all.

My worry is I now may still have too much fat in my food plan and will not lose weight...it is hard to wrap my head around the idea fat is good.

I love almonds, they are great sources of good fats. I don't know so much about raw peanuts, those are not the best tasting raw nuts lol. Just a heads up on that if you decide to try them someday. Your doing wonderful.

I have been doing the non-dairy almond milk thing for several months now and, although it is different from your approach, I've noticed a big difference. I think that any time you change your diet on a major level, you will see something change. Here's hoping you see some good results - fat is not our enemy - we just have to be aware that there are different kinds and all are not created equal! Viva la revolution!

Yes - evelyn 64, I got the same kind of regular sweetened almond milk you suggested and it is really delicious tasting to me - better than the unsweetened and the extra few calorie are still better than dairy milk.

i switched too to low-fat cottage cheese. it think it does taste better. still do unsweetened almond milk or skim milk though.

I think people think that when you eat FAT it instantly migrates to your hips, thighs, belly and butt. That does not happen. There are good fats and bad fats....the good fats can be found in meats, nuts and dairy products. The bad fats can occur when we fry or change the chemical composition through cooking or heating. Now, that doesn't mean you should go crazy with the fat. However, I think SUGAR and sugar substitutes are a bigger concern...they metabolize and mess up your insulin in your body. Look at the kids who grow up drinking High Fructose Corn Syrup and Sugared drinks...and sodas...they are battling obesity. Now, its also about the highly processed carbs...but FAT has been demonized. If you have Fat in moderation, your body will process it and it will pass out of you body. I say focus on carbs and sugar/artificial sweetners. If you can get Stevia....that stuff is great and its all natural. Its late so forgive me if this is a rambling diatribe on Carbs/sugar vs. Fat.

I do pretty well with the carbs - I keep my net carbs under 100 when I am able; net carbs being my total carbs minus the fiber count. I think I get all natural sugar in fruits and veggies - but I will have to review my choices a little, too.

I have a great cookbook called "Nourishing Traditions" The Cookbook that challenges Politically Correct Nutrition and the Diet Dictocrats. It is very interesting and it deals a lot with fat and societies view on it. I don't agree with everything she says but it has some great recipes.

Well I say good deal, HCB. I think I have read a lot of stuff for a long time that a bit of good fat in the diet is a good thing - some fat in dairy, nuts, olive oil, etc. I know you are hypervigilant about fat, so you're sticking your toe into the water, so to speak. It's good to experiment and mix it up a little bit.

Hint on using cheese in recipes - buy the strongest flavors (feta, extra sharp cheddar, etc.). You'll get a nice flavor but use less cheese, therefore a lot less fat and calories.

What matters for losing weight is the total calories. If you are more satisfied with low-fat than fat-free and still managing to keep your intake calories where you want them, it will help you stay on your diet. So you're doing exactly what you need.

I have always avoided anything that is fat free mainly because it taste weird and I wonder what they put in there to get the same texture. Since I started I average one third of my calories form fat, one third from protien and one third from carbs. That has worked for me but one of the biggest thing I have learned from this site is that everyone is different. I read in a post or journal here that this weight loss journey is an experiment that we are performing on our bodies and that really stuck with me.
